50g of cornstarch is EXTREMELY much for 80g of water. I ended up with a very thick "dough" that stuck to the potatoes in lumps.

I literally just finished making some disappointing sweet potato fries, trying to figure out what to change, when this pops up in my feed. I will definitely be trying this!

tried this, it didn't really work and made a TON of dishes. The fries stuck to the cooling racks too. They came out mostly mushey.

I’ve used this a few times and here a nice hack I’ve developed.

Half way through cooking, take them out and toss them with oil. Then add them back in.

The oil really sticks and they get a nice roast

Did it with a Kumara and it worked thank you. Can't wait to try with an orange sweet potato. Did it on baking tray

I made them and they were delicious! I made a sauce with mayonnaise, chili’s and spring onions cut into small pieces, paprika powder and grated garlic☺️ they were a success 😋

It is very easy to make crispy sweet potatoes in an air fryer. I buy frozen sweet potatoes. I Microwave a plate of them for 2 minutes to get them mostly thawed, then toss them in the air fryer for another 8 minutes until the tops of some are just starting to turn black, at this point they are all very crispy, much more so than any fast food fries you might compare them to. Then I pour a little melted butter over them and enjoy.
