6:39 Horizontal cuts are extremely unnecessary to get a good dice on an onion. Whether you want larger or finer pieces, all you need are vertical cuts. Once you vertically cut the onion, the pedals are now arranged in a julienne and when you chop them they will come out in perfect squares. Horizontal cuts just add an unnecessary and potentially dangerous step. There is no value in horizontal cutting an onion.

tbh... i don't understand the horizontal cuts... the onion is already layered by nature... vertical cuts are enough for dicing tho...

Very helpful knife skills but I do have a question. In dicing onions, why do the horizontal cut? I’ve found it unnecessary given the onions naturally layered structure.

The horizontal slicing of onions is pointless... The onion layers are already separated.
