Best Starter Veggies That Don’t Bloat or Make You Ga$$y Big Cheesy Bowl of Veggies- What Else Could you Ask for?!?
If you get gassy from veggies like broccoli and cauliflower, then veggies like hearts of palm, zucchini, spinach, mushrooms, carrots. and cucumbers can be great bets. The recipe for this cheesy veggie bowl is below.
This recipe is : 1 tbsp olive oil, 3 Kumato tomatoes, 1 small yellow onion and 5 chopped cloves of garlic. 1 chopped zucchini and 1-2 teaspoons of herbs de Provence or Italian seasoning. I also add 1/2 teaspoon of garlic powder and pinch of salt and pepper. Stir and bake at 400°F for 15-20 minutes. Next stir in 2-3 cups of hearts of palm rice. (You can buy it canned online or at major grocery stores. I bought 2 boxes from Trader Joe’s. )
Stir in 3/4 cups of part skim shredded mozzarella or cheddar. You can of course use dairy free cheese as well. Make 4-10 servings depending on your hunger level and how you plan to plate it. It would be amazing as a veggie side for any meal or snack with the @2bmindset weight loss program. Would be great paired with a protein like tofu, shrimp or chicken for dinner. THIS was the best tip ever. SHOCK. Instead of an "all or nothing"mentality of pristine eating, add some cheese that will make you eat MORE vegs rather than pizza instead of veg.

Cheese is my addiction! It’s good protein that I add into my salads (especially blu and feta) along with an egg, nuts and seeds on Meatless Monday, I top my tuna melt with it on fishy Friday, I add it to my chickpea or red lentil pasta on Pasta Wednesday (yeah, I love artichokes in my pasta too :)) I was the family mouse when I was a kid 😹

I have gastroparesis so I found out the hard way about some veggies causing excess bloating and discomfort. There’s this amazing cauliflower chickpea soup I made but about wrecked my stomach. I appreciate the discussion on different vegetables that can cause discomfort. I will still eat them but more cautiously. I would to see if you have any recommendations for a low fat low fiber meal or two.
