Regarding the popularity of Omurice outside Japan: One factor might have been the Japanese movie Tampopo from the 1980s. While it is centered around Ramen, there is one scene where a guy prepares a very basic Omurice for a boy. It is educational and funny at the same time. I am not sure how popular the movie was in general in the West, but I saw it on German television, and I can't have been the only one.
