cap lol. I made the '15 minute' broccoli and tofu one 3 times and i still havent even gotten close to 15 minutes. the last attempt i was routing the whole process out like a speedrun. i was practicaly bhopping across the kitchen from flipping the tofu to dumping out the brocolli at exactly 2 minutes to it wouldnt overcook. and somehow i ended up spending 30 minutes. i just dont know how 15 is possible
Oh and I forgot to start the rice. so theres extra time

I love your approach to meal prepping for cooking at home throughout the week! Having pre-cooked or mostly cooked ingredients in easy to grab containers is kind of a game changer for me. The biggest challenge for me is reusing ingredients I buy for a specific meal and not letting anything go to waste.
Quick tip for the crispy tofu….weigh it down with something to press even more liquid out, and coat with potato starch or corn starch and seasonings for a really crispy tofu! You miiight be able to fit that into a 15min recipe?
You can also do a pot-in-pot method when cooking smaller amounts of rice in the pressure cooker. Just put your rice and water in a Pyrex dish….or oatmeal or whatever. It prevents sticking to the stainless steel pot.
