I put slits in the roast and stuff those with garlic slices, season the roast, drege in flour, shake off excess, and brown on all sides. I also use chicken stock. Always delicious.

Always cook your vegetables separately. If you don't, they will absorb much of the various flavors you intended for the roast. The vegetables will also darken and possibly become too soft and mushy.

One thing that I do with my roast is dust it with a little (seasoned) flour before searing it. It gives it a nice crust and helps thicken the gravy.
